Caviar from eggplants is very fragrant and richer in taste than caviar from stewed vegetables!

Odessa-style caviar – ingredients:

Eggplant – 3 pcs.

Bulgar pepper – 2 pcs.

Tomato – 1 pc.

Red onion for eggplant caviar – 2 pcs.

Parsley – to (your) taste

Olive oil – 2 tablespoons

Black pepper – to taste

Preparation:

Step 1

For Odessa-style caviar, heat the oven to 200 degrees. Wash and dry all the vegetables and greens for Odessa-style caviar. Use small eggplants for caviar. Use bell peppers with thin walls. Instead of red onion, you can take ordinary onion.

Step 2

Put the eggplants, bell peppers and onions in a mold and put in the oven. Drizzle with olive oil and pepper.

Bake vegetables for eggplant caviar in a preheated oven under the grill until characteristic black burns appear on the peppers and eggplants for 35-40 minutes.
