Quick and tasty snack
This dish is a great idea for a light and original dinner or holiday table. Instead of the usual stuffed peppers, we will prepare them in the form of rings, which looks very appetizing. The delicate filling of chicken, mushrooms and cheese is perfectly combined with juicy pepper.
I really like to make simple but impressive dishes, and these stuffed bell pepper rings are one of my favorites. They look bright, appetizing and always attract attention on the table. I also prepare them for a family dinner, and when I’m waiting for guests, it comes out quickly, tasty and without too much trouble.
Usually it takes me about 40-45 minutes to cook. The active time is about 20 minutes, the rest is frying. This amount of ingredients makes about 3-4 servings, depending on the size of the peppers and how generously you stuff them.
The calorie content of one portion is approximately 280–320 kcal, so the dish is quite light, but at the same time filling.
Ingredients
- Bulgarian pepper (large): 2 pcs.
- Chicken fillet: 2 pcs.
- Mushrooms: 200 g
- Onion (purple or white): 1 medium
- Hard cheese: 100 g
- Greens (parsley, dill or basil): bunch
- Eggs: 2 pcs.
- Flour: 2 tbsp. l.
- Salt and pepper: to taste
- Vegetable oil: for frying
Pepper rings with minced meat, how to cook
For cooking, I take 2 large bell peppers – I like them to be of different colors, then the dish looks even more beautiful. I also use 2 chicken fillets, 200 g of mushrooms, one medium onion, about 100 g of hard cheese, a bunch of greens (usually dill and parsley), 2 eggs and 2 tablespoons of flour. I do not forget about salt, pepper and a little vegetable oil for frying.
Step 1
First I deal with pepper. I wash it well, cut off the top and take out the core with the seeds. Then I cut into beautiful rings about 1-1.5 cm thick. I don’t throw away what’s left – I chop it finely and add it to the filling so that nothing goes to waste.
Step 2
Next I prepare the filling. I cut the chicken fillet into very small cubes – this is how it cooks faster and keeps its shape better in rings. Separately, fry the onion in a pan until golden, add chopped mushrooms and the rest of the pepper. I fry everything together for a few minutes until the mushrooms become soft and excess moisture evaporates.
Step 3
Then I mix the chicken, fried vegetables, grated cheese, chopped greens, eggs and flour in a large bowl. I add salt and pepper to my taste and mix well – the filling should be juicy, but not liquid.
Step 4
Now the most interesting thing is formation. I heat a pan with a little oil, lay out the pepper rings and carefully fill them with the filling. I do this with a spoon, pressing a little so that the minced meat holds well.
Fry under the lid on medium heat for about 5 minutes on each side. The peppers become soft, and the filling is tender and juicy. The main thing is to take your time and let them bake well.
Sometimes I like to experiment a little. For example, instead of chicken, you can take turkey or even mixed minced meat. If you want a richer taste, add garlic or a little paprika.
Cheese can also be changed: mozzarella gives tenderness, and hard cheese gives a more pronounced taste. If you want to make the dish lighter, you can remove the flour or use less cheese.
I serve these stuffed rings hot. They taste best with a sour cream sauce or a light yogurt sauce with herbs. A fresh vegetable salad or just crispy bread also goes well. This is exactly the dish that is always eaten to the last bite.
Tips
I also want to share a helpful tip: these stuffed rings are great for freezing. If you prepare them in advance, you can spread the rings on a baking sheet, freeze them, and then transfer them to a container or bag for storage in the freezer.
When you want a quick dinner, it is enough to take out the frozen rings, thaw them in the refrigerator or a little in a pan, and then fry or heat them in the oven – and the dish is ready with almost no additional preparation time. This is very convenient, especially if you want to save time on weekdays or have a ready-made snack for unexpected guests.
