Ingredients
- Beets: 1 pc.
- Red onion: ½ pc.
- Soft goat cheese: ½ head
- Pine nuts: a handful (can be replaced with walnuts)
- Olive oil, salt and pepper – amount to your taste
Preparation of beet-and-cheese salad
Wash the beets thoroughly, dry them, sprinkle them with olive oil, salt and pepper them.
Wrap the beets in foil and bake in an oven heated to 170°C until soft.
Let the finished beetroot cool down, then peel it and cut it into cubes.
Salt and pour olive oil over the beets, mix thoroughly.
Cut the goat cheese and red onion into cubes about the same size as the beetroot.
Combine all ingredients in one bowl. Sprinkle with black pepper and nuts.
