Arrachera is a Mexican beef steak. It can be found on the menu of almost any bar and restaurant in Mexico, and is adored by the indigenous population.
Meanwhile, preparing a Mexican steak is not difficult even in our realities in an ordinary kitchen.
Mexican steak – ingredients:
beef steak – 2 pcs.
lime – 1 pc.
red onion – 1 pc.
butter – 30 g
fresh chili pepper – 1 pc.
fresh cilantro – a bunch
soy sauce – 1 tbsp. spoon
olive oil – 1 tbsp. spoon
wine for arrachera – 50 ml
freshly ground black pepper – to taste
ground coriander – a pinch
Cane sugar – 1 tbsp. spoonsalt – to taste
Preparation:
Step 1. For arrachera Mix olive oil, lime juice, soy sauce. Add chopped fresh chili and cilantro stems, marinate the steaks in this mixture.
Step 2. We rub all the deliciousness into the meat for the Mexican steak, without sparing the meat fibers – massage with spices will only make it tastier.
Cut the onion with feathers, fry in butter. Pour in the wine and let it evaporate, then add the sugar and simmer for another 10-15 minutes. As a result, the onion will be soft, with caramel notes in the taste.
Step 3. Fry the meat in a dry pan for 3 minutes on each side. Transfer the steaks to a board or plate, cover with a sheet of foil and leave to “rest” for 10 minutes.
Before serving, salt the Mexican steak and serve with caramelized onions and fresh cilantro.
