Pies with Bean Filling, Which Mexicans Love So Much – Gorditas! Now We Eat All Summer

Pie pies with beans – ingredients:

corn flour – 300 g

bell pepper – 50 g

canned red beans for gorditas – 50 g

onions – 30 g

olive oil – 20 ml

ground chili pepper – to your taste

ground coriander – a pinch

dry oregano – a pinch

salt – 1 teaspoon

Preparation:

Step 1. 

For pies with bean filling, finely chop the onion and bell pepper and fry in olive oil for 12-15 minutes over medium heat. Add the beans from the can and heat for another 5 minutes.

Step 2. 

Grind the mass with a pestle and add all the spices, mix well.

Step 3. 

Pour the flour with 150 ml of boiling water and knead the gorditas dough. When the dough cools a little, add more water if necessary. The consistency should be like dough for pies.

Step 4. 

Form a ball with a diameter of 6-7 cm, knead it with your hands or a rolling pin. Put a teaspoon of vegetable filling, cover it with dough and carefully cover the pie. Repeat with remaining dough. Preheat the oven to 180°C.

Step 5. 

Fry the gorditas in a dry pan over medium heat for 7-8 minutes on each side, and then put them in the oven to bake for 12-15 minutes. Such pies are best served warm, so eat them immediately or be sure to reheat them.

Be sure to serve bean pies with sour cream or tomato sauce for breakfast or as a snack.
