A fragrant Georgian dish that can be prepared in minutes
When I want something hearty, aromatic and truly Georgian, but time is short, I always choose this recipe. Thanks to canned beans, the whole dish is prepared in 15-20 minutes, and the taste is as rich and bright as if you spent hours cooking beans from scratch. Walnuts, fresh greens, spicy adjika and aromatic vegetables create the same Georgian soul that is so loved in my family.
This lobio is a great idea for an everyday family dinner, when you need to quickly feed everyone something tasty and healthy. It turns out to be filling enough to replace a full meal, and at the same time light thanks to the large amount of greens and vegetables.
I like that the recipe is very flexible: you can adjust the spiciness, add more greens or even make it less caloric.

Calorie (approximate):
- 135-155 kcal per 100 g of ready meal
- One portion (approximately 250-300 g) — 340-420 kcal
The dish is hearty thanks to the beans and nuts, but remains relatively light.
Ingredients (for 3-4 servings):
- Beans in their own juice (red or white) – 1 can (400-450 g)
- Carrot – 1 medium pc.
- Celery (stems) — 1-2 pcs.
- Onions – 1 medium pc.
- Onion-leek (white part only) – 1 pc.
- Walnuts – 50 g
- Adjika sharp – 1-2 tbsp. l. (adjust the sharpness to your taste)
- Young garlic – 1-2 cloves
- Cilantro is a big bunch
- Basil (fresh) – a large bunch (or a mixture of greens)
- Salt and ground black pepper – to taste
- Vegetable oil (or olive) — 2-3 tbsp. l. for frying
How to cook lobio
Step 1. Frying vegetables
Cut the carrot and onion into small cubes. Heat 2-3 tablespoons of oil in a deep frying pan or saucepan. Put the onions and carrots and fry on medium heat for 4-5 minutes until the vegetables become soft and slightly golden.
Add thinly sliced white part of leek and celery, cut into thin half rings or small pieces. Cook for another 2-3 minutes, stirring. The vegetables should remain a little crunchy – this will add a nice texture to the finished dish.
Step 2. Adding beans
Mash the beans from the can with a fork directly in the can or in a bowl. Leave about a third of the whole grains for a nice texture. Along with the liquid from the can, put the beans in the pan with the vegetables. Immediately add 1-2 tablespoons of spicy adjika and mix well. Stew everything together for 3-4 minutes on moderate heat.
Step 3. Nuts and greens
While the dish is simmering, grind 50 g of walnuts together with cloves of garlic in a blender or coffee grinder to a fine crumb (not flour, but crumb – it tastes better). Add this aromatic mixture to the pan and stir. Nuts will make lobio richer and a little creamier.
At the end, add finely chopped fresh cilantro and basil. I usually take large bunches – greens are the main character here. Salt and pepper to your taste. If you like juicier lobio, add 2-3 spoons of water or vegetable broth. Cook for another 1–2 minutes and remove from heat.
Tips:
If adjika is very spicy, start with 1 spoon and add gradually.
Beans do not need to be stewed for a long time so that they do not turn into porridge.
Try adding different spices: a pinch of suneli hops or ground cinnamon for a more authentic Georgian taste.
If there is no leek, you can replace it with additional onions or green onions.
This recipe is very easy to adapt. Replace part of the beans with red lentils – it will turn out even faster. For a richer taste, I have already tried adding:
- Sweet bell pepper for brightness
- A little tomato paste or fresh tomatoes
- Pomegranate seeds at the end for acidity and beauty
- More nuts or even some ground flaxseed (for extra goodness)
- For a more piquant version, increase the amount of garlic and adjika.
Quick lobio is best served hot or warm. Serve it with:
- Fresh thin pita bread or crispy bread
- Georgian khachapuri or mchadi (corn cakes)
- Salad of fresh vegetables and greens
- Marinated vegetables or homemade pickles
My family likes to eat lobio with a spoonful of sour cream or yogurt on top – it softens the spiciness a bit. On the festive table, the dish will look great in small serving bowls, sprinkled with additional greens and pomegranate seeds.
Ready lobio is well stored in the refrigerator in a closed container for up to 3 days. The taste even becomes richer on the second day. Just reheat in a pan or in the microwave before serving, adding a little water if the dish has thickened. I do not recommend freezing – the greens and texture of the beans may deteriorate.
This quick lobio is one of my favorite “help sticks” when you need to feed your family quickly and deliciously. It combines benefits, aroma and Georgian flavor in the simplest version. Cook with pleasure, don’t be afraid to add more greens and experiment with spices (I personally like to add suneli hops).
