This recipe is the perfect fall dish that combines the sweetness of pumpkin, the saltiness of bacon, and the spiciness of garlic. It is very easy to prepare, and the taste is incredibly rich.
Ingredients
- orange pumpkin: 250–300 g
- Spaghetti: 200 g
- Bacon: 100 g
- Garlic: clove
- Olive oil: to your taste
- Dry chili (flakes): a pinch
- Salt and freshly ground black pepper: to taste
- Parmesan (optional): for serving
Cooking spaghetti with pumpkin and bacon
Place a pan of salted water for the pasta. Cut the bacon into small squares. Peel the pumpkin and cut it into small cubes. A sweet, not too hard variety, such as “guitar”, is best suited.
In a dry frying pan, heat the bacon so that the fat starts to melt. Add the pumpkin and a pinch of chili pepper. Fry on medium heat until golden brown.
Pour a tablespoon of water, salt, pepper, add chopped garlic. Reduce the heat and simmer the pumpkin under the lid until soft.
Boil spaghetti in boiling salted water until al dente. Drain the water and season the pasta with olive oil.
Place the pasta on plates, top with the cooked pumpkin. If desired, sprinkle with grated parmesan cheese.
