Delicious Georgian dish
The dish combines tender meat and rich nut sauce. This is traditional Georgian cuisine that will surprise you with its deep taste and aroma.
Ingredients
- Beef (shoulder): 500-700 g
- Walnuts: 150 g
- Butter: 40-50 g
- Red onion: 2 pcs.
- Garlic: 2-3 cloves
- Utsho-suneli: 1 tsp
- Ground coriander: ½ tsp
- Red hot pepper ground, freshly ground black pepper and salt: to your taste
- Water: 1.5–2 l
Cooking beef in walnut sauce
Step 1
Pour the beef with cold water, bring to a boil, remove the foam. Reduce the heat to low and cook the meat until tender, about two hours. Take out the finished beef, let it cool and cut it into portioned pieces. Strain the broth.
Step 2
Finely chop the onion, and grind the walnuts in a blender to a paste.
Step 3
Melt the butter in a pan. Fry the pieces of meat until golden brown. Add onion and cook until transparent.Step 4
Prepare the sauce. Dilute the nut paste with a small amount of broth to the consistency of thick sour cream. Stir well, add spices, salt and chopped garlic.
Step 5
Add the nut mixture to the meat, pour in the rest of the broth and heat everything together for another 5 minutes.
