The combination of baked eggplant with spicy garlic and the delicate sweetness of apples creates a unique taste bouquet. And the finishing touch in the form of a golden cheese crust makes this casserole perfect.
Ingredients
- Eggplants: 4 medium
- Cheese: 200 g
- Garlic: 4-5 cloves
- Greens (dill, parsley): 1 bunch
- Apples: 2 pcs.
- Salt: to your taste
- Vegetable oil: for lubrication
- Lemon juice: to taste
Cooking eggplant casserole
We bake eggplants. Bake 4 medium eggplants in the oven at 160°C for 15-20 minutes, turning them 2-3 times.
We are preparing the filling. While the eggplants are baking, finely chop the greens and mince the garlic. Mix them up. Grate the apples on a fine grater.
We assemble the casserole. Cut the baked eggplants lengthwise into two parts and put them in an oiled form. Season with salt, lightly sprinkle with oil and lemon juice. Put a mixture of greens and garlic on top, and then a layer of grated apples.
We bake. Cover the form with foil and send it to an oven heated to 180°C for 20 minutes.
5 minutes before readiness, remove the foil, sprinkle the casserole with grated cheese and bake until the cheese melts and forms an appetizing crust.
Before serving, you can sprinkle the dish with fresh herbs.
