Caramelized Pears in Wine with Chocolate Sauce

This recipe is the perfect way to create an elegant dessert that will impress with its taste. Caramelized pears stewed in wine are served with an aromatic chocolate sauce, creating a perfect combination.

Ingredients:

  • Hard pears 2 pcs. (variety “Conference”)
  • Bitter chocolate 70 g
  • Sugar 3 tbsp. l.
  • Red wine 200 ml
  • Juice of half a lemon
  • Water 300 ml
  • Cinnamon stick
  • A few peas of allspice
  • Plombir for serving

How to cook caramelized pears in wine

Step 1

Mix water with sugar and lemon juice, add a stick of cinnamon and pepper. Cook over medium heat until the sugar is completely dissolved, then bring to a boil and pour in the wine.

Step 2

Peel the pears, put them in wine syrup and cook on low heat for 30 minutes. Turn off the heat and leave the pears to cool, maybe overnight.

Step 3

Remove the pears and spices from the syrup. Boil the wine over high heat, stirring constantly, until about 150 ml of liquid remains.

Step 4

Reduce the heat to low and add the broken chocolate. Stir until the chocolate is completely dissolved and the sauce is uniform.

Step 5

Place the pears in the crema, add a ball of plum beer and pour warm chocolate sauce.
