Create an exquisite dessert with caramelized fruit and crispy puff pastry
Tatin is a classic French “werewolf” cake, which is famous for its simplicity and unsurpassed taste. Thanks to this recipe, you can easily prepare a dessert that combines delicate caramelized pears and crispy puff pastry.
Ingredients:
- Puff pastry 200 g
- Pears 2 pcs.
- Butter 50 g
- Sugar 100 g
- Juice of half a lemon
How to cook tatin with pears
Step 1
Cut the pears into beautiful slices and sprinkle with lemon juice so that they do not darken.
Step 2
In a frying pan, melt butter and pour sugar evenly. Wait until it melts and turns golden brown. The caramel is ready when it begins to darken, so immediately remove it from the heat.

Step 3
Pour the hot caramel into the form in which you will bake the cake.
Step 4
In the same pan where the caramel remained, put the pears together with the lemon juice. Simmer for a few minutes until soft. Then carefully place them in the form on top of the caramel.

Roll or stretch the dough into a circle that will be slightly larger than the diameter of the mold. Cover the pears with it, folding the edges inward. Pierce the dough with a fork in several places so that it does not puff up.
Step 6
Bake the cake in an oven heated to 200°C for 25-30 minutes, until the dough turns golden.
Leave the finished cake for a few minutes to cool down a bit, and then carefully turn it over onto a plate. Delicious!
