Ingredients:
boneless pork neck – 1 kg
bell pepper – 1 pc.
Gouda cheese – 100 g
Freshly frozen spinach – 300 gquince – 1 pc.
sweet potato – 1 pc.
shallots – 3 pcs.
thyme – 3 sprigs
garlic – 3 cloves
maple syrup – 3 tbsp. spoons
salt – to taste
freshly ground black pepper
Preparation:
Step 1.
Defrost the spinach, cut the bell pepper into cubes. Cut the quince into slices, removing the core, peel the sweet potato and cut it into large pieces.
Step 2.
Make longitudinal cuts on the meat and “open” it so that the flat layer is as flat as possible. Beat the meat with a hammer through the film.
Step 3.
Salt, pepper the meat, lay out the spinach, rub the cheese on top and put the pepper cubes. Twist the meat into a roll and tie it with a thread.

Step 4.
Transfer the roll into a baking dish, spread quince, sweet potato and halved shallots around it, sprinkle with salt. Add garlic cloves and thyme sprigs crushed with a knife. Pour maple syrup over the vegetables and the roll and put it in the oven heated to 180 °C for one and a half hours, from time to time pour the juice that has separated on the roll.
