The classic combination of goat cheese and spinach in filo dough will conquer you forever. This pie with goat cheese from Greece – spanakopita, turns out to be very tender and divinely delicious. Eat it warm or cold – it’s equally delicious.
Pie with goat cheese and spinach – ingredients:
phyllo dough – 8-9 sheets
suluguni – 200 g
goat cheese – 200 g
Greek yogurt – 1 jar
spinach – 300 g
eggs for spanakopita – 2 pcs.
garlic – 1 clove
salt, pepper
olive oil for greasing the dough
Preparation:
Step 1. For the Greek pie, thaw the spinach (you can do it in a pan), put it in a colander and let the excess liquid drain.
Of course, you can also use fresh spinach.

Step 2. For the filling of the pie with goat cheese, mash the soft goat cheese with a fork, grate the suluguni, add the spinach, salt, pepper and mix.
If you don’t like goat’s milk products, take any hard cheese.

Step 3. Beat yogurt with eggs with a fork, add finely chopped garlic.

Step 4. Grease the baking dish with olive oil and lay out the filo sheets, placing them so that the ends of the dough hang evenly around the perimeter. Grease each leaf with oil.

Step 5. Pour the filling onto the dough, gently fold and crimp the edges. Brush with olive oil and bake the pie with goat cheese and spinach for 45-60 minutes. at 180 °C (until the filling is ready).
