This recipe is a real find for those who want to preserve the summer harvest of zucchini in an unusual way. Thanks to a special marinade, zucchini acquires a taste and a crispy texture, reminiscent of pickled mushrooms. This is an ideal snack for the winter table.
Ingredients
- Young zucchini: 2 pcs.
- Garlic: 4 cloves
- Dill: bunch
- Water: 0.5 l
- Sugar: 2 tbsp. l.
- Salt: 0.5 tsp
- Vinegar: 80 ml
- Oil: 40-50 ml
- Pepper: to your taste
How to close zucchini that tastes like mushrooms
In a saucepan, combine the water, sugar, salt and vinegar. Bring the mixture to a boil. While the marinade is boiling, wash the zucchini, peel and cut into cubes. Drop them into the boiling marinade and cook for 5-7 minutes. This will keep them crisp.
Place the zucchini in a colander to drain excess liquid. For the dressing, chop the garlic and dill. Mix them with oil and pepper. Combine the cooled zucchini with the dressing and mix thoroughly.
The finished salad can be served immediately or preserved for the winter. To do this, put the hot mixture in sterilized jars, pour boiling marinade and close.
