Lazy dumplings with beetroot
Wrap the beets in foil and bake in the oven until soft (or boil). Clean and grind it in a puree using a blender.
In a deep bowl, combine cheese with eggs and beetroot puree. Add flour, salt and mix well until a uniform dough is obtained.
On a floured surface, form a “sausage” from the dough with a diameter of about 2-3 cm. Cut the “sausage” into small pieces.
Boil the dumplings in boiling salted water. When they float to the surface, cook for another 1-2 minutes, then remove them with a slotted spoon.
