Bruschetta Appetizer with Mussels and Vegetables

It is very easy to make and turns out delicious. Crispy baguette with vegetables and mussels, which you will not be able to tear yourself away from.

Ingredients for 5 servings:

1 small cucumber

Tomato 1 pc.

Mussels in tomato sauce to taste

Dried parsley to taste

Onion (onion or red licorice) 1 pc.

Vegetable oil to taste

Black pepper to taste

1 baguette

Preparation:

Step 1

Cut off 5 slices of baguette.

Step 2

Next, fry a little baguette. And we leave it for now.

Step 3

Now you need to cut the vegetables very thinly. Either a small cucumber, or cut a piece from a large one along the length of a slice of baguette. And then cut into thin slices with a knife or vegetable peeler. We need 10 slices for 5 sandwiches.

Further, we also thinly cut the tomato into circles. 5 circles are needed.

And thinly slice the onion. It’s a matter of taste, but I personally cut 5 semicircles.

Step 6

Now we collect our sandwiches. Before starting to put our ingredients, you can spread the baguette slices with cottage cheese, if you have it. Place two slices of cucumber on each slice, pepper a little. Next, add the tomato, and pepper the new one a little. Now put ~2-3 mussels on the tomato. Beautifully put onions on top, pepper, sprinkle with parsley. Pour a little oil on top. I usually use either sesame or olive. And 1 teaspoon of oil is needed for 1 such sandwich.
