Kutaby – a traditional dish of Azerbaijani cuisine – thin cakes made of unleavened dough. They are prepared with various fillings: with meat, with cheese, with greens, with vegetables and fruits.
Ingredients:
whole wheat flour 500 g
Mazoni 50 g
warm water (as much as the dough will take)
a large bunch of greens (green onions, cilantro, dill, tarragon, sorrel, spinach) 200-300 g
1 small onion
salt
butter for frying onions and greasing cakes
Preparation:
Step 1.
Mix matzoni with flour and salt, knead a stiff dough. Then add warm water to it until the dough becomes tight and slightly sticky to the hands. Leave the dough for at least an hour and a half under the film, and preferably in the refrigerator overnight.
Step 2.
Prepare the filling: chop the onion and fry it in butter. Chop greens, mix with onion and salt. Divide the dough into several pieces of 50-60 grams each. Flatten them into a large thin circle with a rolling pin. Put the filling on half of each circle, cover it with the other half and pinch the edges well.

Step 3.
Heat a dry frying pan. A pancake pan is perfect. Fry the kutabs for about 2 minutes on each side until golden brown. Grease the finished kutab with butter.
