Ingredients:
salmon lightly salted – 400 g
potatoes – 3 pcs.
fresh cucumber – 2 pcs.
boiled carrot – 1 pc.
celery – 1 stem
chicken egg – 1 pc.
quail egg (for decoration) – 2-3 pcs.
pea microgreens – 25 g
medium pickled cucumbers – 2 pcs.
Ingredients for healthy mayonnaise:
chicken eggs – 2 pcs.
sour cream – 3 tbsp. spoons
avocado (ripe) – 1 pc.
soy sauce – 1 teaspoon
mustard – 1/2 teaspoon
lemon juice – 1/2 teaspoon
salt – to taste
freshly ground black pepper
Preparation:
Step 1.
Boil potatoes and carrots, cool, peel. Hard-boil the eggs, cool and peel. Set aside two boiled egg yolks for mayonnaise.
Step 2.
Cut potatoes, carrots, cucumbers, celery, chicken eggs and salmon fillet into small cubes. Set aside part of the microgreen peas for decoration, finely chop the rest and mix with the vegetables.
Step 3.
Prepare the “mayonnaise”: beat the egg yolks in a blender together with mustard, lemon juice and soy sauce. Peel the avocado, add to a blender and blend until smooth. Add sour cream, salt and pepper to your taste, mix. Store the sauce in the refrigerator.
Step 4.
Dress Olivier with mayonnaise. Serve garnished with pea microgreens, a slice of salmon and halves of boiled quail eggs.
