Not a Day Without First Courses! Moldovan Red Borscht with Beans from My Mother-in-law

Moldovan borscht with beans – ingredients:

2  l  boiling water

500 g pork ribs

500 g boiled beans

2-3 pcs potatoes

1-2 beets

1 pc carrot

1 pc onion

1 tablespoon tomato paste

0.5  tsp. sugar

2 cloves garlic

1 sweet pepper

1 pcs lemon

fresh greens

Step 1.

Usually, I cook the first dishes in a thick-walled pot (cauldron) so as not to dirty the pan. For Moldovan borscht, I separate the pork ribs from each other and put them in a pan with a small amount of sunflower oil. Fry on all sides until brown. While the ribs are frying, finely chop the onion and sweet pepper. Grate one carrot. I add the vegetables to the pan and cook until softened, stirring. About 5 minutes.

Then I add 1 tablespoon of tomato paste and mix.

Step 2.

For red borscht, grate two medium beets and put them in a pan. I cover the pan with a lid and simmer everything together for about 5 minutes.

Step 3.

I mix and add two chopped potatoes. I always cut potatoes into small cubes.

Step 4.

Next, I add beans boiled in advance until half-cooked to the Moldavian borscht. I have red beans, but it’s not that important.

I pour in 2 liters of boiling water.

As soon as it boils, I reduce the power of the stove to the minimum possible. It is necessary that the borscht with beans does not boil, but languish. I cover the pan with a lid and cook for 1.5 hours.

Step 5.

Salt the red borscht to your taste.

I also really like to put a lot of greens in borscht. I cut a bunch of parsley and a handful of sorrel.

I pour lemon juice into the pan.

I lay out the greens and turn on the stove at full power.

As soon as it boils, I turn off the stove and cover the pan with a lid. I leave it for 10 minutes.

Very tasty Moldovan borscht with beans and ribs is ready. Delicious!
